 2 cups flat leaf parsley
 1 cup coriander
 1/2 cup baby spinach leaves
 1 cup shallots, chopped
 2 cloves garlic
 2 tbsp fresh chilli, deseeded
 1/3 cup apple cider vinegar
 4 tbsp fresh lemon juice

Combine all ingredients in a food processor or Thermomix and blitz. Blend for about 30 seconds for a chunkier consistency or longer if you would like a more paste-like consistency.
